Introduction

Vegetarian, from certain perspective, could be hard to define. In general, as long as there is no involvement of sacrifice of any animal (including seafood) during the acquisition of food, such a diet could labeled as vegetarian. Some vegetarians are unwilling to see animals being locked up and enslaved to human (although there is no sacrifice of lives), and hence they choose not to consume any egg, milk or even honey. There are also some vegetarians who are leading a more refined lifestyle (e.g. in pursue of optimal health, spirituality or other ideals) and choose to consume only raw vegetables, fruits and seeds.

"Simple Vegetarian" presents only recipes without egg, without milk, without garlic/onion(for Buddhists), without artificial additives and uses only raw ingredients. This is to suits vegetarians of different paths and preferences. Furthermore, due to the current diet of the society which abuses on overly cooked food, meat, refined food; many suffers from gastro-intestinal conditions and acidic blood. Therefore, this cookbook emphasizes a lot on raw food intake, even the consumption of some organic food.

In the process of developing and selecting the recipes for this cookbook, these recipes have to be easy to do and involve minimal hands-on time. This is necessary because life nowadays is too hectic and the simplicity will also encourage beginners and those curious ones to give it a try.

Some people who are unfamiliar to vegetarian, may claim that vegetarian food is monotonous and bland. These 12 modern recipes presented here hopefully could change their view or even trigger their creativity. The simplicity of these recipes and also the simplified method of recipe write-ups (may be seen as lack of specifications and accuracy), are actually done purposely. When trying out the recipes, readers are encouraged to try different dosages, ingredient replacement, or remove/add any ingredient according to personal creativity and liking.

Moreover, "Simple Vegetarian" doesn't only focus on the superficial skill of food preparation, the author actually pays a much higher premium on educating readers on the principles and rationales behind the recipes. The author believes, once readers grab the core underlying the recipes, they would be able to derive unlimited number of creative recipes from the samples in this humble cookbook.
